As a young boy born and raised in The Bronx, Dr. Laski along with his mother, father, grandmother and family dog would take yearly trips down the East Coast of The United States. At that time there was no Interstate highway so they usually traveled on U.S. 1, the Post Road. It is in the restaurants on the sides of the road where he encountered Southern Fried Chicken. This was not home boiled chicken nor was it Chicken Delight, a franchise that happened to have a branch less than two blocks from his apartment in the Bronx. In fact it was, as Dr. Laski now describes it, a bombastic experience for his palate. Each and every year that he traveled he ordered the Southern Fried Chicken. And that started him on his culinary quest. Having later met Carmen, his future wife, in Mexico he became an advocate of another type of food, Mexican cuisine, cooked and prepared just right. Once they moved to Jacksonville, Florida they were introduced to another type of culinary delight, Southern Cooking including, not just Southern Fried Chicken of Dr. Laski’s youth but other wonderful recipes including Venison.Here is a collection of many of the Delights of Southern Cooking, gleaned from their own experience and the recipes shared with them by native southerners from Florida and Georgia.
